Khasta Kachori Ingredients

For the dough

1 cup white flour (maida)

2 tbsp of ghee

3. Salt as per taste

4. Oil for deep frying

For the stuffing

Urad dal (Black Lentil without skin) -75gm to 100gm

Fennel powder-1 tbs

Jeera (Cumin) powder-1and half tbs

Red chili powder-1tbs

Ginger – one inch

Amchur (Dry Mango powder)-1tbs

Salt to taste


Soak the dal for one hour and drain the water. Then grind it coarsely with one inch of ginger. Mix the flour with ghee and salt. Add water and make a soft dough. Do not knead the dough too much. Set it aside for 15 mins.

In a pan put 2 tbs of oil. Let it heat and put all the dry ingredients (spices) and the dal and mix it. Add some salt. Fry it till it becomes dry and changes colour. Remember to keep the flame low to medium. Let the mix cool down.

Then make small balls from the dough. Take one ball and shape like a cup, put one spoon of the filling into it and close it properly and the press it gently with your palm. Prepare all the balls in the same way.

In a big saucepan or kadhai put oil for deep frying. The oil should be medium hot. Put few balls in the oil.  Keep the flame medium. After some time the balls will start puffing and it will come up. Turn the other side and fry till it’s brown from both sides. Now the Kachories are ready. Take them out of the kadhai and keep on the tissue paper to drain out the extra oil. . Enjoy them with Tamarind sauce or Coriander and mint sauce.
